Reframes the repo from "kickstart.nvim fork" to Gravity — a
lightweight IaC system for developer environments. Documents
the manifest system, Claude skill distribution, separation of
concerns (MCP vs skills vs settings), architecture overview,
quick start guide, and all custom nvim plugins.

Removes stale sao.bros.ninja links, points to OpenProject.

Closes OP#409
